We proudly source from Callicrate Cattle Co. at Ranch Foods Direct, pioneers in regenerative ranching.
Their operation blends open-pasture grazing with carefully managed finishing — never the industrial feedlot approach.
This hybrid system focuses on soil health, animal well-being, and flavor, not factory efficiency.
No growth hormones or routine antibiotics
Fertility maintained naturally with livestock manure — no chemical fertilizers
Bone-char and bio-char used to rebuild carbon in local soils
Humane, on-site and mobile processing to reduce animal stress

🥛 Low-Vat & A2 Dairy — Milk That Loves You Back
Most commercial dairy today is ultra-pasteurized (UHT) — heated so high that it destroys beneficial enzymes and denatures proteins, making digestion harder.
We take a different route:
Our milk is from The Colorado Cow, low-vat pasteurized — gently heated at a lower temperature and held longer. This preserves the natural enzymes, creaminess, and digestibility nature intended.
Our milk is also A2 Milk, meaning it contains only the original A2 beta-casein protein (not the mutated A1 protein found in most conventional milk).
Together, these choices make our dairy easier on the gut — even for people who usually avoid milk or experience lactose-related discomfort.

🧈 100 % Seed-Oil-Free Cooking
Almost every restaurant uses seed oils like canola, soybean, and sunflower — cheap, but high in omega-6 fats that drive inflammation and oxidative stress.
We cook exclusively in real beef tallow, the same stable, nutrient-rich fat that kitchens used for generations.
Tallow provides a perfect crisp, rich flavor, and contains fat-soluble vitamins A, D, and K₂ that support your body rather than inflame it.

❤️ A Family Mission to Eat Real Food
The Happy Cow was born from personal change. After my father passed from colon cancer, our family took a hard look at how modern food affects health. We stripped away the processed oils, fillers, and fake “health” claims — returning to real food: pasture-raised meats, vegetables, clean fats, and simple ingredients.
Recent research reinforces what we’ve lived: ultra-processed foods and excess sugar — especially early in life — can set the stage for poor health. As reported by the BBC, studies show that diets high in added sugar during the first 1,000 days of life are linked to inflammation, metabolic stress, and lifelong health challenges.
That’s why we cook the old-fashioned way — in beef tallow, not seed oil. We use honey and maple syrup in moderation, instead of refined sugar. Every choice reflects the lesson we’ve learned as a family: real food heals, fake food harms.
