Cooking Fat

100% Beef Tallow. Zero Seed Oils.

Every fry is cooked in real beef tallow, the stable fat kitchens used for generations, rich in fat-soluble vitamins A, D, and K₂. Our burgers hit the griddle with nothing added at all. No canola, soybean, or sunflower oil. Not ever.

Sugar

No Refined Sugar

We sweeten with honey, maple syrup, and coconut sugar, in moderation. Our sourdough bakers skip refined sugar too, and our ketchup is organic Elevation Ketchup, sweetened with organic coconut.

Dairy

Low-Temp, Vat-Pasteurized A2 Milk

Our milk comes from Origin, sourced from The Colorado Cow. It's vat-pasteurized low and slow instead of blasted with high heat, so more of milk's natural enzymes and flavor make it through. And it's A2: only the A2 beta-casein protein, the original protein in milk before the A1 variant spread through modern herds. Many people who struggle with regular milk find A2 easier to digest. We think it's simply better milk.

Two ways to eat well. One is legendary.

Every burger we serve starts with beef we'd feed our own family. And when you're ready for something unforgettable, upgrade to the real thing.

Standard on every burger

Grass-Fed, Grass-Finished Beef

Prairie Legacy · Rocky Mountain Natural Meats

Heritage Criollo cattle, raised mostly on Colorado pasture from start to finish and never finished on grain. That matters: compared with conventional grain-fed beef, grass-finished beef is higher in omega-3 fatty acids, CLA (conjugated linoleic acid), and antioxidant vitamins A and E, with a better balance of omega-3s to omega-6s.

  • 100% grass-fed & grass-finished
  • Mostly raised right here in Colorado
  • No growth hormones or antibiotics, ever
  • More omega-3s & CLA than grain-fed beef
  • Rich in vitamins A & E
  • Smashed on a hot griddle, cooked straight up with nothing added

Included with every burger. No upcharge, no compromises.

The Upgrade

100% Fullblood Colorado Wagyu

Colorado Reserve Wagyu · Elizabeth, Colorado

A lot of "Wagyu" out there is crossbred. Ours is registered 100% fullblood Wagyu from Colorado Reserve Wagyu, raised entirely on pasture on the high plains just southeast of Denver. No feedlots, ever. Wagyu's famous marbling is naturally rich in monounsaturated fat, the same kind of fat found in olive oil.

  • Registered 100% fullblood Wagyu, not a crossbreed
  • 100% pasture-raised in Colorado, never in a feedlot
  • Naturally rich in monounsaturated fats, like olive oil

Available on every burger, including The Happy Calf kids burger and our seasonal specials.

Upgrade Your Burger

We'd rather pay a rancher than a shareholder.

Four numbers that explain why we buy local.

Your money

7¢

That's what a farmer gets from each dollar you spend eating out.

Keep your money in Colorado. It works harder here.

Independent restaurants keep about twice as much of each dollar in town as chains.

The details

In three studies, independent restaurants kept $56–79 of every $100 in the local economy, compared with $30–37 for chains. Counties with more small, locally owned businesses also have lower rates of mortality, obesity, and diabetes.

The beef

85%

of America's feedlot beef runs through four companies.

We buy from the other guys.

Three of them paid $171 million in 2025 to settle price-fixing lawsuits, with no admission of guilt. And 75–80% of "grass-fed" beef sold in the U.S. is imported.

The details

Those four companies handled just 36% in 1980. Two of them are Brazilian-owned. And until January 2026, imported beef repackaged here could still be labeled "Product of USA."

The land

#1

El Paso County, our county, leads Colorado in farmland projected to be lost to development.

Profitable ranches stay ranches.

417,500 acres of Colorado farm and ranch land are on track to be lost by 2040. Grassland birds are down 53% since 1970.

The details

Working ranches keep land open. Colorado's state bird, the lark bunting, nests in native grassland, and well-managed grazing can help build healthy, carbon-rich soil.

Freshness

20miles

That's our lettuce's whole trip, from Black Forest. Nearly all U.S. lettuce comes from California and Arizona.

Fewer middlemen. Fewer mysteries.

Produce starts losing vitamins the day it's picked.

Real food has a return address.

Local isn't a buzzword here. It's a list of names, and almost every one of them is right here in Colorado.

Built on loss.
Driven by purpose.

After my father passed from colon cancer, I took a hard look at what I was eating. I stripped away the processed oils, the fillers, the fake "health" claims — and returned to something simpler.

What I found wasn't an accident. Food companies swap real ingredients for cheap industrial ones because it pads their margins. Regulators wave it through. And a sicker country is a better customer for the health care industry. Everybody gets paid except you.

The Happy Cow is our way of opting out: real ingredients from suppliers we'll name, no cutting corners to make an extra buck, and food that's actually worth what you pay for it.

"Big Food cuts corners, Washington looks the other way, and the health care industry sends you the bill. We'd rather just feed you right."
